Going Filipino - Cooking Class (21 May 2009)

We celebrate yet another successful cooking class held at ACC for the month of May. After a busy schedule prevented us to host the same class in April, we finally made time to explore the great cuisines from the Philippines.

With 15 guests on the 5-stop expedition, our first stop was the savoury Mung-Bean soup bonded with Tapioca leaves. No bean was left un-scooped as the expeditors enjoyed the hot soup to tease their appetite.

It was not long before the next stop. Here everyone was overwhelmed by the tantalising taste of corn beef blended with sweet potatoes and green peas. A stone throw away was the Bitter Gourd Salad (Ampalaya Ensalada) and brown rice. The guests were kept busy loading their plates, some went and came back again but all were satisfied.

As we headed eastwards, we had the famous Eggplant Frittata (Tortang Talong) in mind. Many had no knowledge of it but the aroma was quick to draw their attention. As soon as everyone arrived, the loaded tray was crowded and in a few breaths the Frittata was exploited.

As the expedition drew to an end, there was yet another wonder to discover. There could not be a better way to polish such an adventure, and indeed words can not describe. Sweet Potato & Jackfruit Crumble with a special touch of fresh coconut milk amazed everybody. There was silence as each person concentrated as the crumbling pieces of this baked delight colonised their taste buds.

These recipes may come from far, but the easy to learn them is within our capability. It takes the desire to learn and a mind to appreciate diversity for one to be a good cook. Delicious food is not synonymous with that made from thick cook books and expensive ingredients. From simple recipes and cheap ingredients one can put together a healthy and tasty meal. This is the philosophy we want to instil in our guests and the community at large. The ACC team is grateful to all participants who find time to join us on these monthly cooking classes. It is our hope that you prosper in health and teach others to live a healthy lifestyle.
